Our Hospitality Campus is an EFQM European Centre of Excellence in the delivery of quality-assured Further Education and Training. We are dedicated to providing the highest level of culinary and hospitality training to our learners during their time with us. The variety of Further Education and Training on offer at our College of FET campus ranges from entry-level to advanced, with the duration of training varying from 3 months to 2 years. Most of the training offered is on a full-time basis, with awards ranging from Levels 4 to 6 on the National Framework of Qualifications.

Chef
Culinary Arts
QQI Level 6 Major AwardÂ
This is delivered as a total immersion 1-year culinary course, heavily focusing on upskilling existing hospitality workers with entry-level knowledge of kitchen operations (Commis Chef/ Chef de Partie), someone with a QQI Level 5 qualification, or relevant industry experience. Modules include menu design and applied nutrition, producing a culinary event, pastry, baking and desserts, international cuisine, hospitality business systems, gastronomy, culinary techniques, food safety management and work experience.
Progression / Employment Opportunities
On successful completion, you will be awarded a QQI Level 6 Major Award in Professional Cookery. This will enable you to continue to work in the hospitality industry with a higher standard of knowledge and skills. You may also wish to further your learning through opportunities available in Further Education and Training.
Commis Chef Apprenticeship
QQI Level 6 Major Award
The aim of this apprenticeship is to gain knowledge and skills to prepare, cook and present a wide variety of dishes to a professional standard. The apprenticeship is 2 years in duration and consists of phased training, combining on-the-job training within the industry (subject to COVID-19 restrictions) and off-the-job training at our Hospitality Campus in Roxboro, Limerick.
Progression / Employment Opportunities
On successful completion of this apprenticeship, you will be awarded a QQI Level 6 Advanced Certificate in Culinary Arts. This provides the opportunity for you to work as a Commis Chef or progress your study within Further or Higher Education.
Culinary Skills Traineeship
QQI Level 4 Minor Award
This traineeship will enable you to develop key skills in culinary techniques, kitchen skills, and short-order cooking. The programme is 5 months in duration and consists of phased training, combining on-the-job training within the industry (subject to COVID-19 restrictions) and off-the-job training at our Hospitality Campus in Roxboro, Limerick.
Progression / Employment Opportunities
On successful completion of this traineeship, you will be awarded a QQI Level 4 Minor Award in Culinary Skills. This provides you with the opportunity to continue to work in the hospitality industry with a higher standard of knowledge and skills. This traineeship is also a route to progression and will enable you to progress to the QQI Level 5 Major Award in Professional Cookery or the Commis Chef Apprenticeship.
Professional Pastry
City & Guilds Level 3 Diploma
This course takes place 1 day a week (Thursdays) for 35 weeks and the minimum entry requirements are a QQI Level 4 Major Award in Culinary Skills, or relevant industry experience. Modules include supervisory skills, principles in food safety, practical gastronomy, dough and batter products, hot, cold, and frozen desserts, display pieces, and decorative items.
Progression / Employment Opportunities
On successful completion of this course, you will be awarded a City & Guilds Level 3 Diploma in Professional Patisserie and Confectionery. You will be able to add to your skills within a commercial kitchen environment.
Professional CookeryÂ
QQI Level 5 Major AwardÂ
This course is offered both full-time and part-time and gives you the opportunity to pursue a career in the catering industry and in hospitality. It aims to provide you with the opportunity to develop your own natural abilities in professional cookery and to gain experience in catering. It will also help you to explore your creative ability and develop confidence in working within the catering industry.
Progression / Employment Opportunities
On successful completion of this course, you will be awarded a QQI Level 5 Major Award in Professional Cookery. Upon completion, you will be qualified to work in a variety of areas including catering, hotels and the hospitality sector in general. This course is also a route to progression. For example, it enables you to progress to our Commis Chef Apprenticeship.
Hospitality Operations
This QQI level 5 programme Hospitality Operations and Cabin Crew Operations aims to enable the learner to develop knowledge, skills and competence in the art of hospitality, and to work independently under supervision in a range of key areas in a hospitality enterprise.
Progression / Employment Opportunities
Learners will receive a QQI Minor Level 5 Award in Meal Service, QQI Minor Level 4 Award in Handling Food Hygienically and a City & Guilds Certificate in Barista Skills. Upon completion, learners will be able to work in a variety of different roles within the hospitality industry such as customer service, food preparation, deli counter, and many more.
Bar & Restaurant
Barista Skills
City & Guilds Level 2 Diploma
This 1 day per week course will provide you with the practical skills and knowledge required to work in a busy café environment. You will gain an understanding of the coffee bean journey, from sourcing to grinding. You will develop skills in milk handling, latte art, the coffee grinding process, and customer service.
Progression / Employment Opportunities
On successful completion, you will be able to seek employment in a café/bar environment or further your studies within Further Education and Training.
Professional Bar Skills
Non-accredited
This 1 day per week course will provide you with first-hand experience in the craft of creating cocktails. You will gain an understanding of beverage trends, flavour pallets, and product development. You will also have the opportunity to work hands-on in a bar environment.

On successful completion, and with a broadened skillset in bar work, you will be able to further your employment opportunities.

Hotel Management
QQI Level 6 Minor Award
The aim of this 6-month course is to provide learners with the strong skillset required to work in a supervisory management role within the hospitality industry. On completion of this 1 day per week course, learners will be able to develop operations manuals for work-related procedures, including systems for records management, prepare departmental budgets, identify best practice in on-going training and development and conduct effective performance appraisals.
Progression / Employment Opportunities
On successful completion of this course, the learner will be awarded a QQI Level 6 Minor Award in Supervisory Management. Upon completion, graduates will be able to work in a supervisory management role in hotels, restaurants, bars, events, and workplace catering.
